Renowned chef Jae Bang brings his Michelin-level expertise and more than sixteen years of experience in global haute cuisine to the kitchen, emphasising an innovative menu that includes modern Australian dining and embraces New Nordic philosophies and local ingredients.
Spanning two beautifully designed levels, Freyja can accommodate 130 guests. Upon entry, the upper level unfolds into two light-drenched areas accentuated by towering cathedral windows and crowned with a sculptural, slatted timber ceiling that pays homage to Nordic maritime heritage. In harmony with this, the Chef's Kitchen invites guests to catch the vibrant culinary action up close in the bar.
Mathew Gillett's art plays a pivotal role in defining Freyja's aesthetic, lending a subtle, gothic vibe to the venue's atmosphere. This artistic dimension is thoughtfully balanced with metallic finishes, light sand tones, and materials such as organic ceramics and soft textiles. The furniture within the restaurant complements this aesthetic beautifully, with pieces that echo the raw simplicity and functional elegance.
Throughout the restaurant, the J39 chair, the Spanish Chair and the Spanish Dining Chair by Børge Mogensen stand out for their understated, warm, and practical design, adding elegance to the space. Similarly, in the restaurant's bar, the Spine Barstool by design studio Space Copenhagen meets the demand for stylish seating with its design that ensures comfort for hours on end.
